Cabernet Sauvignon: destemming. Fermentation in concrete vats without added yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels.

18 months in French oak demi-muids (20% 1 wine, 40% 2 wines, 40% 3 wines) for Cabernet Sauvignon, in barrels for Chenin Blanc
