Winemaking

Cabernet Sauvignon: destemming. Fermentation in concrete tanks without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels.

Livestock farming

Aged for 18 months in French oak demi-muids (20% first-fill, 40% second-fill, 40% third-fill) for the Cabernet Sauvignon, and in barrels for the Chenin Blanc
