Wine Production

Direct pressing followed by cold settling. Fermentation (each grape variety vinified separately) in 600-liter demi-muids. Daily stirring on the lees. No malolactic fermentation.

9 months in 600-liter demi-muids (30% new, 35% one-wine, 35% two-wine)
