Traditional with destemming. Fermentation and vatting for 12 days with alternating pumping over and punching down to gently extract the full potential of the fruit, at a temperature of 23/25°C.

On fine lees after racking following malolactic fermentation, to stabilize the fruit and body. Racking in early spring.

Fresh and fruity after a little aeration, revealing lovely aromas of tart red fruits.

A pure nose with fruit aromas. Pleasant attack on the palate. Slightly hollow mid-palate but fairly long finish with light spices. It's nice to be able to rediscover grape varieties.
