Wine Production

The so-called traditional method. When the grapes are pressed, the first juices are collected to form the “têtes de cuvée.” After an initial alcoholic fermentation, the wine is blended, followed by a second fermentation in the bottle. The wine can thus develop bubbles while the bottles rest on their lees.

Aged for 24 months on the lees, with daily riddling, followed by disgorgement to remove the sediment, and finally sealed with a permanent cork with no dosage added
