Wine making

Syrah: destemming. Natural fermentation in concrete vats without added yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels.

Livestock farming

18 months in French oak demi-muids (35% 1 wine, 65% 2 wines) for the Syrah. In barrels for the Chenin Blanc.

I was expecting a pleasant surprise, but ultimately found a wine that clearly lacks personality and character.
