Winemaking

Syrah: destemming. Natural fermentation in concrete tanks without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels

Livestock farming

The Syrah is aged for 18 months in French oak demi-muids (35% first-fill, 65% second-fill). The Chenin Blanc is aged in barrels.
