Wine Production

Cabernet Sauvignon: destemming. Fermentation in concrete tanks without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels.

18 months in French oak demi-muids (20% one-wine, 40% two-wine, 40% three-wine) for the Cabernet Sauvignon, and in barrels for the Chenin Blanc

Intense color, still young. A concentrated nose revealing lovely aromas of candied red fruits, with notes of graphite and black pepper. On the palate, it has substance and fullness, with a fine, tight tannic structure and lovely balance. A lovely wine.
