Winemaking

Cabernet Sauvignon: destemming. Fermentation in concrete tanks without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels.

Livestock farming

Aged for 18 months in French oak demi-muids (20% first-fill, 40% second-fill, 40% third-fill) for the Cabernet Sauvignon, and in barrels for the Chenin Blanc

Deep color, still young. Concentrated nose, revealing lovely aromas of candied red fruits, with notes of graphite and black pepper. On the palate, it has substance and fullness, with a fine, tight tannic structure and a lovely balance. A fine wine.
