Winemaking

Destemming, punching down, and daily pumping over; maintaining the temperature at 25°C during alcoholic fermentation, followed by a long maceration on the lees. Racking and malolactic fermentation in tank.

Livestock farming

Aged on fine lees. In the spring, Marsanne is blended in to help the wine open up and highlight the balance of this cuvée. Bottled after light filtration.
