Traditional method with destemming. Fermentation and maceration for 12 days, alternating between gentle pumping over and punching down to gently extract the fruit’s full potential, at a temperature of 23–25°C.

Livestock Farming

Aged on fine lees after racking following malolactic fermentation to stabilize the fruitiness and richness. Racked in early spring.

A clean, fruity nose. A pleasant attack on the palate. The mid-palate is a bit thin, but the finish is fairly long with light spicy notes. It's nice to be able to rediscover grape varieties.
