Traditional method with destemming. Fermentation and vatting for 12 days, alternating between gentle pumping over and punching down to gently extract the fruit’s full potential, at a temperature of 23–25°C.

Livestock farming

Aged on fine lees after racking following malolactic fermentation to enhance the fruitiness and richness. Racked in early spring.

A clean, fruity nose. A pleasant attack on the palate. The mid-palate is a bit thin, but the finish is quite long with subtle spicy notes. It’s nice to rediscover these grape varieties.
