Wine Production

Syrah: destemming. Natural fermentation in concrete tanks without the addition of yeast. Daily punching down and pumping over. Maceration for 40 days at 25°C. Chenin Blanc: direct pressing followed by settling. Fermentation in barrels

Livestock Farming

The Syrah was aged for 18 months in French oak demi-muids (35% first-fill, 65% second-fill). The Chenin Blanc was aged in barrels.

I was expecting a pleasant surprise, but in the end, it was a wine that clearly lacked personality and character.
