Manual harvesting with plot-by-plot sorting and on-site sorting

Winemaking

Direct pressing followed by cold settling. Fermentation (each grape variety vinified separately) in 600-liter demi-muids. Daily stirring of the lees. No malolactic fermentation.

Livestock farming

Aged for 9 months in 600-liter demi-muids (30% new, 35% one-wine, 35% two-wine)
