The Languedoc appellation is a regional appellation that, following a decree dated April 30, 2007, encompasses all the AOCs of Languedoc and Roussillon under the single name “Languedoc.” The diversity of the terroirs and the distinctive character of the wines have led to the establishment of a Languedoc classification system. Thus, within the Languedoc appellation, we can notably distinguish the subregional appellations of Saint-Chinian, Faugères, and Clairette du Languedoc, recognized as AOCs under their own specific decrees. The addition of the communes of origin completes this hierarchy: Cabrières, La Méjanelle, Montpeyroux, Picpoul de Pinet, Quatourze, St-Christol, St-Drézéry, St Georges d’Orques, St Saturnin, and Vérargues.

The Languedoc appellation spans three departments: Aude, Hérault, and Gard, covering 22,000 hectares of vineyards. The geographical production area thus encompasses 168 municipalities stretching along the Mediterranean coastline, from Narbonne in the west to the edge of the Camargue in the east, and backed by the foothills of the Montagne Noire and the Cévennes. The uniqueness of this appellation lies in the diversity of its terroirs.

Languedoc wines include reds, rosés, and whites. Due to the appellation’s diversity, the authorized grape varieties form a mosaic: Grenache, Syrah, and Mourvèdre (at least 50%) alongside Cinsault and Carignan for reds and rosés; Grenache, Clairette, Bourboulenc, Piquepoul, Roussanne, Marsanne, and Rolle (at least 70%) alongside Carignan, Terret, Ugni, Maccabeu, and Viognier for the white wines of the Côteaux du Languedoc. These blends showcase all the qualities of the Languedoc terroir, particularly through wines from Mas Cal Demoura, Domaine de Montcalmès, Château Puech-Haut, Domaine Peyre Rose, Domaine de l’Hortus, Château des Aurelles, as well as Domaine d’Aupilhac, Mas Julien, and Domaine du Pas de l’Escalette.
