The white Persia is made from the estate’s oldest vines on a Roussanne plot. It reveals a very mineral nose, with aromas of white stone fruits, exotic fruits, and white flowers, along with a hint of mint. A full-bodied wine with a fresh, briny attack, it combines beautiful richness with well-integrated acidity. Pairing it with asparagus wrapped in smoked bacon or veal sweetbreads will delight the palates of even the most discerning gourmets!
