The Chiroubles Appellation d'Origine Contrôlée (AOC) is a municipal appellation that has been recognized since 1936. Its vineyards cover approximately 360 hectares. Chiroubles wine is produced entirely within the municipality that gave it its name.
 
Made from black Gamay with white juice, as is the case throughout the Beaujolais region, Chiroubles is a red wine. The vineyard’s soils are very uniform, consisting of coarse-grained granite, with a few veins of granulite here and there. The hillsides of Chiroubles enjoy a favorable exposure, facing east and southeast. The terrain is very rugged and undulating. Chiroubles is the highest of the Beaujolais crus, ranging in elevation from 250m to 450m. Chiroubles wines are vinified using whole clusters, a practice specific to Beaujolais. After a maceration period of 8 to 12 days—depending on the vintage and the winemaker—and an initial alcoholic fermentation, the grapes are pressed. The free-run juice and press juice are then blended, after which a second, malolactic fermentation begins to soften the wines by reducing their acidity.

With its aromatic and rich character, Chiroubles wine is often considered the most “Beaujolais-like” of all the appellations. The Chiroubles appellation is particularly representative of the most expressive wines that Gamay can produce, thanks in large part to producers such as Domaine Daniel Bouland, Domaine Emile Cheysson, and Maison Coquard.
