A variety of soils of Kimmeridgian origin, with medium-depth clay-loam textures, overlying marl containing fossilized oysters. Fairly calcareous.

Wine Production

No added yeast; long fermentation using indigenous yeasts in temperature-controlled tanks. Spontaneous malolactic fermentation. Blending of tank batches at the end of vinification. Long aging at moderate temperatures. Fining with bentonite if necessary. A single, light filtration performed before bottling.

Livestock Farming

6 to 8 months on fine lees, exclusively in stainless steel tanks, with as little handling as possible.

About the estate:

A long-established Chablis family, the Michels cultivate the finest vineyards, including both Premier Cru and Grand Cru sites. The estate is also one of the very few to offer the Grenouilles Grand Cru, of which La Chablisienne remains the primary producer. Since 1969, winemaking has been carried out in stainless-steel tanks, so the wines here often start out rather understated in the bottle, but their minerality comes through effortlessly after a few years of aging.
