Produced in the pure Chablis tradition, this Chablis is a blend of eight vineyards planted with vines over 25 years old. It is the very expression of the Kimmeridgian terroir typical of the appellation: minerality and white fruits blend harmoniously to produce a round, pure wine.

Varied soils originating from the Kimmeridgian period, moderately deep clay-loam textures, on marl with fossil oysters. Fairly calcareous.

at optimal maturity

Wine making

No added yeast, long fermentation using indigenous yeast in temperature-controlled vats. Spontaneous malolactic fermentation. Blending of vats at the end of vinification. Long stabilization at moderate temperatures. Fining with bentonite if necessary. A single light filtration before bottling.

Livestock farming

6 to 8 months on fine lees, exclusively in stainless steel tanks, with as little handling as possible.

About the estate:

An old Chablis family, the Michels cultivate the best areas, both premier crus and grands crus. The estate is also one of the very few to offer the Grand Cru Grenouilles, whose main producer remains La Chablisienne. Since 1969, the wines have been vinified in stainless steel vats, so they often start out discreetly in the bottle, but their minerality reveals itself beautifully after a few years of aging.
