The Family Michel has been involved in Chablis winemaking since 1850. Today, Guillaume and Jean-Loup Michel They manage the vineyard in keeping with the philosophy of their ancestors: winemaking using native yeasts, no use of oak barrels, minimal intervention during winemaking, and extended aging on the lees... All of this is achieved while maintaining high standards in the vineyard. In fact, the rows are grassed, pruning methods are tailored to the vines, and the soil is carefully worked. Each plot is tended to limit yields and thus produce high-quality Chablis wines.
