The family Michel has been involved in winemaking in the Chablis region since 1850. Today, Guillaume and Jean-Loup Michel They manage the vineyard in keeping with their ancestors’ philosophy: winemaking using native yeasts, no use of oak barrels, minimal intervention during fermentation, and extended aging on the lees... All this while maintaining high standards in the vineyard. Indeed, the rows are grassed, pruning methods are adapted, and the soil is worked. Each plot is tended to limit yields and thus produce high-quality Chablis.
