No added yeast; long fermentation using indigenous yeasts in temperature-controlled tanks. Spontaneous malolactic fermentation. Blending of tank batches at the end of vinification. Long aging at moderate temperatures. Fining with bentonite if necessary. A single, light filtration performed before bottling

About the estate:

A long-established Chablis family, the Michels cultivate the finest vineyards, including both Premier Cru and Grand Cru sites. In fact, the estate is one of the very few to offer the Grenouilles Grand Cru, of which La Chablisienne remains the primary producer. Since 1969, winemaking has been carried out in stainless-steel tanks, so the wines here often start out rather understated in the bottle, but their minerality comes through effortlessly after a few years of aging.
