Careful sorting, slow pressing of whole clusters in a pneumatic press; the second-press juice is separated from the free-run juice and transferred to barrels immediately after settling; alcoholic and malolactic fermentation take place in oak barrels (10–15% of which are new)

Aged for 12 to 14 months in oak barrels (10 to 15% of which are new)

A clear, brilliant white-gold color

Seductive, with delicate aromas of honeysuckle blossoms and mirabelle plum jam, opening up to notes of honey and gingerbread as it breathes

Lively and fresh on the palate, it then develops a lovely roundness with generous fruit, wrapped in a hint of lemon zest, leading to a long, mineral finish with notes of crushed stone characteristic of the terroir

About the estate:

The estate is now led by Frédéric Drouhin, supported by his sister Véronique for the wines and his brother Philippe in the vineyards. In July 2013, it opened a wine bar in the heart of Beaune. It has found its stride and has established itself as a sure bet. The estate draws on a biodynamic vineyard particularly well-stocked with great white wines, in the Côte-de-Beaune as well as in Chablis (wines sold under the Drouhin-Vaudon label), including the famous Clos des Mouches.
