Wine Making

Careful sorting, slow pressing of whole clusters in a pneumatic press; the press-residue juice is separated from the free-run juice and transferred to barrels immediately after settling; alcoholic and malolactic fermentations take place in oak barrels (10 to 15% of which are new).

Aged for 12 to 14 months in oak barrels (10 to 15% of which are new)

Alluring, with delicate aromas of honeysuckle blossoms and mirabelle plum jam, evolving upon aeration into notes of honey and gingerbread

Lively and fresh on the palate, it then develops a beautiful roundness with generous fruit, enveloped in a hint of lemon zest, leading to a long, mineral finish with flavors of crushed stone characteristic of the terroir

About the estate:

This winery is now led by Frédéric Drouhin, supported by his sister Véronique for the wines and by his brother Philippe in the vineyards. In July 2013, it opened a wine bar in the heart of Beaune. It has found its stride and is establishing itself as a sure bet. The winery draws on a biodynamic vineyard that is particularly rich in great white wines, both in the Côte-de-Beaune and in Chablis (wines sold under the Drouhin-Vaudon label), including the famous Clos des Mouches.
