Bettane & Desseauve
Domaine rated 2*Stars (A serious and recommendable production, but a little more regular and homogeneous than the previous one)
About the domain :
Located in the hills above Épernay, the Janisson-Baradon estate is run by Richard Janisson and his two sons Maxence and Cyril. The vineyard comprises 9 hectares of slopes surrounding the champagne capital, carefully and attentively tended. The Janissons have cleverly modernized the style of their wines, and this year again, parcel selections dominated the tasting, with champagnes of assertive character that retain the suppleness of the sector. A sure bet.

Guide des Vins Gault & Millau
Rated wine 89/100
Domaine rated 1*Star (Serious production)
About the wine:
Dosed at 2 g/l, this wine is full-bodied on the palate. Rich, spicy and ripe, it is perfect as an aperitif with gougères.
About the domain :
Founded in 1922 by Georges Baradon, a remueur, and his son-in-law, Maurice Janisson, a cooper, the house is still run by the Janisson family, who cultivate just over 9 hectares of vines on the western slopes of Épernay, in Chouilly and Brimont. The vineyards have been tilled since 1997, without the use of weedkillers. Most of the cuvées are a blend of pinot noir and chardonnay, in equal proportions.

Extra-BSA nature, uncomplicated and electrified by a frank liveliness that then tightens on the sharp edge to a full, fresh finish. Ideal for pan-fried scallops with olive oil and shallots, to tame with tenderness and suavity the ardor and nervousness typical of non-dosed cuvées. Score = 3.7.

Fine bubbles, not too sweet. Perfect as an aperitif or with fish.

A fine, racy wine, just as I expected. A tip that applies to most of this house's wines: they develop greater complexity and charm if cellared for at least a year.

Precise and straightforward, beautifully fresh, a mineral wine with floral aromas and fine, discreet milky notes. A very good aperitif champagne.
