Sequential pressing of whole clusters, cold settling for 2 days, transfer to barrels with fine lees, fermentation with indigenous yeasts at 18 to 24°C, light and regular stirring throughout alcoholic fermentation. Natural malolactic fermentation depending on the vintage and the pH of each barrel.

Livestock farming

In 228L Chassin, Damy, and Claude Gillet barrels, including 10% new wood. Blended in mid-April 2021.

About the estate:

Gaëlle and Florian met in Burgundy and decided to settle in Languedoc in the early 2010s. After several years of searching, the Franco-German couple settled in Fontjoncouse, where they cultivate plots of old vines. The wine is carefully aged in barrels. This is a wonderful initiative in this wild and rocky part of the Corbières region. This is a winery that will go far!
