Sequential whole-cluster pressing, 2-day cold settling, racking with fine lees, fermentation with indigenous yeasts at 18–24°C, and regular, gentle stirring throughout alcoholic fermentation. Natural malolactic fermentation depending on the vintage and the pH of each barrel.

Livestock farming

Aged in 228-liter barrels from Chassin, Damy, and Claude Gillet, 10% of which are new oak. Blended in mid-April 2021.

About the estate:

Gaëlle and Florian met in Burgundy and decided to settle in the Languedoc in the early 2010s. After several years of searching, the Franco-German couple settled in Fontjoncouse, where they cultivate plots of old vines. The wine is carefully aged in barrels. A promising new force in this wild and stony part of the Corbières. This is a winery with a bright future!
