Crémant de Limoux
The Crémant de Limoux AOC differs from Blanquette in terms of its blend and aging process.
Made mainly from Chardonnay and Chenin Blanc, the blend may also include Pinot Noir and Mauzac, which together cannot exceed 20% of the grape varieties used.
This sparkling wine is produced using the traditional method, meaning that the second fermentation takes place in the bottle (just like Champagne wines). The bottles are then left to rest on their lees for nine months before the addition of the liqueur d'expédition, which determines the sugar content of the wine. Once the final cork has been inserted, Crémants de Limoux are aged in the cellar for at least 15 months before being released for sale.
Crémant de Limoux is recognizable by its pale color, very fine bubbles, bouquet of white flowers and citrus fruits, and light toasted notes.
