Crémant de Limoux
The Crémant de Limoux AOC differs from Blanquette in its blend and aging process.
Made primarily from Chardonnay and Chenin Blanc, the blend may also include Pinot Noir and Mauzac, which together may not exceed 20% of the total grape variety composition.
This sparkling wine is produced using the traditional method, meaning that the second fermentation takes place in the bottle (just like Champagne). The bottles are then left to rest on their lees for 9 months before the addition of the expedition liqueur, which determines the wine’s sugar content. Once the final cork is sealed, Crémants de Limoux age in the cellar for at least 15 months before being released for sale.
Crémant de Limoux is recognizable by its pale color, very fine bubbles, and aromas of white flowers and citrus, along with subtle toasty notes.
