Winemaking

The so-called traditional method. When the grapes are pressed, the first juices are collected to form the cuvée heads. After an initial alcoholic fermentation, the wine is blended and then undergoes a second fermentation in the bottle. This allows the wine to develop its effervescence while the bottles rest on the lees.

Livestock farming

Aged for 24 months on the lees, with daily riddling, followed by disgorgement to remove the sediment, and finally sealed with a permanent cork without any dosage
