Cheverny
TheCheverny AOC production area covers 24 municipalities. Annual production, approximately 20,000 hectoliters, is divided into roughly equal parts: half white, half red and rosé.
Today, this appellation produces fine, fruity wines that are sought after for their qualities that are perfectly suited to our times: tender, convivial wines without excess.
Grape varieties
AOC Cheverny wines are traditionally and necessarily blended. For white Cheverny wines, the grape varieties are Sauvignon, Chardonnay, and Menu Pineau. For red and rosé Cheverny wines, Gamay noir à jus blanc and Pinot Noir are the main grape varieties.
Cheverny wines
White wines: lively and refined, they are made from a blend of Sauvignon, which expresses itself perfectly on this terroir, releasing all its aromatic power (notes of blackcurrant and licorice), and Chardonnay, which brings elegance. Menu Pineau may also be used in the blend to provide balance where necessary.
Red wines: Rich and full-bodied, they are a blend of Gamay, which brings freshness and drinkability, and Pinot Noir, which adds finesse and subtlety. Cabernet Franc and Côt may be used as complementary grape varieties.
Rosé wines: Supple wines, whose freshness is marked by a spicy, sometimes slightly toasted note.

The soils are clay-siliceous, on a Beauce limestone base. Temperatures are moderate, with mild springs and summers, while autumns are cool and humid. This means that the grapes never overripen. Vine cultivation:
The stages of vine maintenance are, in principle, common to all appellations, but their intensity varies depending on each one. • Controlling the quantity and quality of the grapes to come. Cutting the wood of the vine stock to a defined height. Removing certain buds. • Optimizing sunlight exposure and aeration of the bunches by cutting the upper part of the vine: this is called trimming, and in summer, leaf removal: removing some of the leaves around the bunches. • Manual or mechanical harvesting.Cheverny: at the heart of the wine cellar
The white grapes are placed in a press to extract the juice. The sugar it contains is converted into alcohol, releasing carbon dioxide. This is alcoholic fermentation. The fermented grape juice is called Bernache, which is very popular. The red grapes are placed directly into vats. This is followed by alcoholic fermentation and then the transformation of malic acid into lactic acid, reducing the acidity of the wine: this is malolactic fermentation. For rosé wine, the red grapes are pressed as described above for white grapes. Once these steps are complete, the wine is aged in barrels or vats: from a simple juice, a genuine Cheverny is born, ready to be enjoyed within the year! Dry and fruity, Cheverny white wine is perfect with fish and goat's cheese. The same characteristics apply to rosé wines, which pair well with fish and grilled meats. Light, fruity, and spicy red wines pair well with white meats and grilled meats.
