About the estate:

Vincent Hayer, who served as the estate’s operations director for nearly 20 years, took over management of the property in 2020. The estate, formerly a vineyard belonging to Château de Troussay, has been certified organic since 2012 and biodynamic since 2015. Owned by the deeply committed Chevrier family, the estate spans 30 hectares divided between Cour-Cheverny and Cheverny, featuring notably very old Sauvignon vines.

I can't think of any other way to describe this wine than rock salt and crushed black pepper. It's crisp, fiercely salty, and decidedly unfruity. Austere, but with a powerful character. Bring on the fish and fries!

Aromas of peach, apricot, dried herbs, lemon zest, and spices, with medium body and fresh acidity. Well-balanced and creamy on the edges, with a relatively light mid-palate and a mineral finish. Made from biodynamically grown grapes certified by Demeter. Ready to drink now.
