The Syrah grapes were vinified as whole clusters in mid-September along with the white grapes, followed by a long cold maceration with limited extraction; Grenache and Mourvèdre were added at the end of fermentation, followed by cold pressing and malolactic fermentation.

About 20% of the wine is aged in barrels to refine the Syrah; the rest is aged in truncated-cone-shaped wooden and concrete tanks, with three standard rackings under inert gas before final blending.

As always with Xavier Vignon, this wine reaches its peak—especially after being open for 24 hours, when it truly comes into its own. Abundant red fruit and subtle hints of spice complement a round, supple, and flavorful palate.
