The Syrah grapes were vinified as whole clusters in mid-September along with the white grapes; they underwent a long cold maceration with limited extraction, followed by the addition of Grenache and Mourvèdre at the end of fermentation, cold pressing, and malolactic fermentation.

About 20% of the wine is aged in barrels to refine the Syrah; the rest is aged in truncated-cone-shaped wooden and concrete tanks, with three standard rackings under inert gas before final blending

As always with Xavier Vignon, this wine reaches its peak—especially after 24 hours of opening, when it truly comes into its own. Plenty of red fruit and subtle hints of spice accompany a round, supple, and flavorful palate.
