The texture is taut, with lively acidity, but the body and richness balance the wine; a delicious and pleasant hint of bitterness lingers on the finish. About the estate:

Frédérick and Franck Buisson, whose family has lived in the village since the 12th century, represent the eighth generation of winemakers at this historic estate in Saint-Romain. Certified by Écocert since 2012, they practice viticulture and winemaking that are as natural as possible. The red wines, which always contain a small proportion of whole clusters, offer a precise expression of their terroir, championing the rediscovery of a Saint-Romain that we have rarely seen at this level. The precise white wines are equally impressive.

About the estate:

Frédéric, the winemaker, and Franck, the sales manager, run one of the largest estates in the southern part of the Côte de Beaune. Having practiced organic farming—certified since 2009—they made the transition to biodynamic farming in 2018. For the past ten years, they have been following the lunar calendar for their bottling. Their meticulous work in the vineyard and cellar allows them to produce deep, distinguished wines that age well. This is an estate that beautifully showcases the Saint-Romain appellation in both reds and whites; the wines are refined, precise, and elegant. A range of wines that fully deserves its first star.

About the wine:

The 2024 Saint-Romain Sous La Velle, made from vines up to 80 years old, offers a fragrant bouquet with notes of orange blossom, lime, and crushed stone, elegantly reflecting the limestone soils. The palate is almost mineral on the attack, with fairly lively citrus acidity derived from the limestone and notes of oyster shell, leading to a mouthwatering finish. Excellent. 2027–2037
