In the new Domaine Thierry Germain - Roches Neuves winery, the grapes are carefully sorted before being transferred to wooden vats, where they are vinified separately. The grapes are harvested exclusively by hand, in successive sortings. Fermentation takes place in the cellar at low temperature for 3 to 4 months, to develop the full aromatic palette and freshness of Thierry Germain - Roches Neuves wines.
