Bettane & Desseauve

Rated estate (2027 guide): 3*Stars (High-quality production that serves as a benchmark in its sector)

About the estate:

Julien Zernott and Delphine Rousseau acquired this vineyard in 2002; it is situated on terraces surrounded by dry-stone walls. Perched at an altitude of 350 meters across some twenty hectares at the foot of the Larzac Plateau, the vines are cultivated organically, bathed in a cool, windy microclimate, and benefit from the terroir of limestone scree from the Causse and the area’s rich biodiversity. The common thread here is freshness, made possible by the vineyard’s altitude; it is evident in every wine, without exception, making this estate stand out among the Larzac terraces by striking the perfect balance between freshness and structure. This estate is a sure bet and a must-visit; we have no regrets about the third star it was recently awarded and see constant improvements even in its entry-level wines.

Drawing on the rich biodiversity of the surrounding area and using only organic products, they cultivate the vineyard using methods that respect nature.

Wine rated (2026 guide) 92/100

Rated estate (2027 guide): 2*Stars (These exceptional estates, often boasting fabulous terroirs, are must-haves that, thanks to the consistency and excellence of their wines, belong in the cellars of discerning wine lovers)

About the wine:

This wine’s mineral brilliance and lovely structure embody the radiant qualities of the new Languedoc rosé. Its finesse and refined aromas of red berries, the light, briny acidity on the finish, and its beautiful fullness on the palate make it one of the best of its generation. A must-try!

About the estate:

Delphine and Julien Zernott started from scratch in 2003 on a plot located in the far northwest of the Terrasses du Larzac, in the cool climate region of Pégairolles-de-l'Escalette. Twenty-three vintages later, the couple has elevated their wine portfolio to the highest level. Their vineyard consists of some fifty terraces on limestone scree, with a high proportion of very old vines. For several years now, the wines they produce have been at the very top of their game, expressing themselves with grace, appeal, and complexity. They are very close to earning that third star.

Review and opinion by Mr. GILLES D. Published on September 6, 2026

An early vintage, yet the wine retains its flavor profile—both in terms of the fruit’s vibrancy and the dynamic freshness provided by a slightly tart structure. Delicate and smooth, this standout rosé is particularly well-suited for the table, especially when paired with a Tielle sétoise.
