Domaine du Pas de l'Escalette

The Domaine du Pas de L'Escalette’s vineyard spans 10 hectares across terraces of limestone scree surrounded by dry-stone walls called “clapas,” nestled at an elevation of 350 meters at the foot of the Larzac Plateau in the Languedoc region. The valley where the Domaine du Pas de L'Escalette vineyard lies has a north-south orientation, offering two exposures—sunset and sunrise—and the soil has a unique water regime, filtering and draining well (water from the plateau is abundant). The Larzac plateau brings cool nights and acts like a fantastic air-conditioning system!

At Domaine du Pas de L’Escalette, Julien Zernott and his partner Delphine cultivate southern grape varieties as naturally as possible. The vineyards at Domaine du Pas de L’Escalette have been certified organic since the 2012 vintage and are now farmed biodynamically, without synthetic chemicals, and the soil is worked to bring out the terroir and produce high-quality grapes, which are harvested by hand with the utmost care. The estate’s winemaker is the talented Henri Pellé, in the Menetou-Salon appellation.
