About the domain :

Julien Zernott and Delphine Rousseau acquired this terraced vineyard surrounded by low dry-stone walls in 2002. Perched at an altitude of 350 meters on some twenty hectares at the foot of the Larzac plateau, the vines are grown organically, bathed in a cool, windy micro-climate and benefiting from the limestone scree terroir of the causse and all the biodiversity of the area. The common thread here is freshness, made possible by the altitude of the vineyard; it's found in all the cuvées, without exception, making this a special estate on the Larzac terraces that finds the perfect balance between freshness and structure. We have no regrets about our recent third Michelin star award, and we see constant improvements right from the entry-level wines.

Julien Zernott and Delphine Rousseau settled here in 2003. With the help of the intense biodiversity of the surrounding area and the exclusive use of organic products, they work the vineyard in a way that respects nature.

About the domain :

Located to the north-west of the Terrasses du Larzac, in the beautiful area of Pégairolles de l'Escale and Lauroux, this 20-hectare estate has been owned by Julien and Delphine Zernott since 2003. The vineyard comprises some fifty terraces on limestone scree, with a high proportion of very old vines. This terroir is in good hands with this talented and determined couple. While the whites confirm their great elegance, all the reds presented this year are of the highest order, graceful, with exemplary tactile management and ageing.

An elegant rosé from Languedoc, full of color and flavor. It develops a supple, fresh and subtle texture of crisp red fruit, citrus and sweet spices, enhanced by a lively minerality that gives it both fullness and depth. A lovely thirst-quenching, acidic finish. Made for the table and for a convivial moment around a generous dish of tuna and red bell pepper lasagne. Score = 4.2.
