"A little gem in a bottle!"

"Tradition 2021 (chardonnay and savagnin aged two years in barrels without topping up) expresses itself very well today, not in power but in flavor, with beautiful suggestions of green walnut and fresh flour, lots of delicacy." (Le Guide de la RVF 2026) The whole is a great success, a perfect balance that will go wonderfully with parsleyed snails.

Bettane & Desseauve

Bettane & Desseauve

Domaine rated 2*Stars (A serious and recommendable production, but a little more regular and homogeneous than the previous one)

About the domain :

The estate dominates the whole of Château-Chalon, perched on its rocky outcrop at an altitude of 450 metres. Jean handed over the reins to his daughter Hélène, who took over from him after a first life as a translator in Brussels, and ensures the smooth running of the 15-hectare estate. Certified organic since 2013, the wines are among the vineyard's success stories, particularly the sailing wines, the estate's great specialty. The yellow wines (4.5 hectares of Château-Chalon) are matured in magnificent vaulted cellars.

About the domain :

Domaine created in 1985 by Jean Berthet-Bondet, former mayor of Château-Chalon and an agricultural engineer, like his wife. Conducted according to the rules of organic farming, the 13 ha of vines and vaulted cellars have been managed since 2018 by their daughter Hélène.

Wine rated ( 2025 guide) 94/100 (Great wine)

About the wine:

2021 was a special year, with an almost non-existent harvest and therefore a very low volume. Côtes du Jura Tradition 2021 was produced with 60% Chardonnay and 40% Savagnin, much more Savagnin than in "normal" years, as Chardonnay suffers more from frost, which alters the balance considerably. The grape varieties were blended and aged together in barrel for three years. The nose is fragrant, spicy and mushroomy, more akin to sherry, and the palate is dry, chalky and lively, due to the flor's "liposuction", which eliminates the wine's fat. It shows good ripeness, with 13% alcohol and very good acidity. I also tasted a bottle of 2001, and the wine had a fantastic, spicy nose, with hints of green nuts and curry, and a fresh, balanced palate. If the 2021 follows the same path, I'm being too harsh in my rating... Well done!

Wine rated (2026 guide) 92/100

Domaine rated (guide 2024) 1*Star (Stars in the making or quality winegrowers with a good level of production, you won't be disappointed when you taste the wines from these estates)

About the wine:

Tradition 2021 (chardonnay and savagnin aged two years in barrels without topping up) expresses itself very well today, not in power but in flavor, with lovely suggestions of green walnut and fresh flour, lots of delicacy.

About the domain :

Chantal and Jean Berthet-Bondet, both agricultural engineers, left the city in 1985 to create this 11-hectare estate, located equally in the Château-Chalon appellation and Côtes du Jura, and certified organic since 2013. Jean's daughter Hélène is now at the helm. Quality is progressing in the direction of fruit expression and purity. New cuvées and wine labels have been cleverly redefined, even if the cuvées matured under sail remain the undisputed stars of the domaine, with a Château-Chalon that can serve as a model for the prestigious appellation.
