Pauillac
Visit Pauillac is a renowned red wine from the Bordeaux vineyards. Pauillac is a port on the Gironde estuary, but the vineyard is perched on a magnificent, broad ridge of more or less sandy gravel with white filtering soil, resting on a more or less chalky marl substratum. Here, the soil is so poor that nothing can grow, except the vines, which, in order to survive, have to look deep down for the nutrients that make quality wine. The area under vines covered by the Pauillac appellation is around 1,200 hectares, with an annual production of around 55,000 hectolitres.

Located on the left bank of the GirondePauillac is the wine capital of exceptional know-how. Benefiting from a climate that is mild in winter and hot in summer, between rounded plateaus and valleys, the vines of appellation cabernet sauvignon, malbec, petit verdot and merlot mainly, enjoy ideal sunshine. The Cabernet Sauvignon grape is grown on its favorite soil, a mixture of sand and gravel. The wine cellars of Pauillac and its hills are filled with the sweetness of life. A wine made by epicureans is a treasure, a bottled delight.

Pauillac, terroir and know-how.

Pauillac has been a French Appellation d'Origine Contrôlée red wine since 1936. Of course, the terroir has been world-renowned for even longer, thanks in particular to the vineyard's three Premiers Grands Crus Classés: Château Lafite-Rothschild, Château Latour and Château Mouton-Rothschild. The 18 Grands Crus Classés de Pauillac in the appellation, according to the 1855 classification, account for 85% of the vineyard's production, and include such benchmarks as Château Pontet-Canet, Château Grand-Puy-Lacoste and Château Lynch-Bages. 

Visit wine Pauillac is produced in the Médoc vineyards Bordeaux. Its vineyards stretch over 1,200 hectares and produce around 54,000 hl of wine a year. Between Saint Estèphe and Saint Julien, Pauillac lives up to its terroir with 18 Pauillac vins classés, including three premiers grands crus, Château Lafite Rothschild, Château Latour and Château Mouton Rothschild. Depending on the vintage, grape variety and other winemaker-specific criteria, the grapes are destemmed and macerated in vats for 15 to 30 days. The juice and must are then separated, and the wine is aged for 6 to 24 months in oak barrels, particularly for the grand crus. With Cabernet Sauvignon dominating the blends, Pauillac wines are like their winemakers: full-bodied, complex and nuanced.

Visit Pauillac wines are rich, dense, deep and sappy. They display great finesse, distinction and delicate bouquets. Their broad aromatic palette evokes black cherry, licorice, crème de cassis, morello cherry, rose, iris, cedar, smoke, incense... Tannins are tight but not hard. This red wine is a long-keeping wine and its dark ruby, almost black color when young, turning to amber as it ages, hides treasures: baskets of ripe red fruit, bouquets of violets, notes of undergrowth and spicy scents. This is a powerful, full-bodied wine with great finesse and delicate aromas. Over time, its tannins become softer, allowing its full bouquet of smoky, spicy aromas to unfold, with floral touches of rose and iris. It can be aged from 5 to 20 years. Ideally served between 15 and 17°, these great Pauillac wines follow a single rule in terms of gastronomic pairing: they must enhance both the dish served and the wine. They are the perfect accompaniment to red meats, particularly entrecôte à la bordelaise, game, leg of lamb and delicate fish. 

And like Alfred de Musset, love Bordeaux wines, especially in their old age. Love all straightforward wines, because they make you love.
