Pauillac
The Pauillac is a renowned red wine from the Bordeaux region. Pauillac is a port on the Gironde estuary, but the vineyard is perched on a magnificent, broad ridge of gravel—somewhat sandy—featuring a white, well-drained soil resting on a substrate of marl with varying degrees of limestone content. Here, the soil is so poor that nothing grows except vines, which, to survive, must dig deep to find the nutrients that determine the wine’s quality. The vineyard area covered by the Pauillac appellation spans approximately 1,200 hectares, with an annual production of around 55,000 hectoliters.

Blessed with a mild climate in winter and warm summers, nestled among rolling plateaus and valleys, the vineyards of the appellation’s grape varieties Cabernet Sauvignon, Malbec, Petit Verdot and Merlot Above all, they enjoy ideal sunlight. Pauillac: Terroir and Expertise.

Pauillac has been a French red wine with Appellation d’Origine Contrôlée status since 1936. Of course, the terroir has been world-renowned for even longer, thanks in particular to the vineyard’s three First Growths: Château Lafite-Rothschild, Château Latour and Château Mouton-Rothschild. The 18 Grands Crus Classés of Pauillac within the appellation, according to the 1855 classification, account for 85% of the vineyard’s production and include such iconic estates as Château Pontet-Canet, Château Grand-Puy-Lacoste, and Château Lynch-Bages. 

The Pauillac wine is produced in the Médoc region from Bordeaux. Its vineyards stretch across 1,200 hectares and produce approximately 54,000 hectoliters of wine per year. Located between Saint-Estèphe and Saint-Julien, Pauillac lives up to the reputation of its terroir with 18 classified Pauillac wines, including three First Growths: Château Lafite Rothschild, Château Latour, and Château Mouton Rothschild. Depending on the vintage, grape variety, and other criteria specific to each winemaker, the grapes are destemmed and then left to macerate in vats for 15 to 30 days. Next, the juice and must are separated, followed by aging for 6 to 24 months in oak barrels, particularly for the grands crus. With Cabernet Sauvignon as the dominant variety in its blends, Pauillac wine resembles its winemakers: full-bodied, complex, and nuanced.

The Pauillac wines are rich, dense, and deep, with a full-bodied character. They display great finesse and distinction, with exceptionally delicate aromas. Their broad aromatic profile evokes black cherry, licorice, crème de cassis, morello cherry, rose, iris, cedar, smoky notes, and incense… The tannins are firm but not harsh. This red wine is a age-worthy wine and its deep ruby color—almost black when young, shifting toward amber ruby as it ages—hides a wealth of treasures: baskets of ripe red berries, bouquets of violets, notes of the forest floor, and spicy aromas. It is a wine that is at once powerful, full-bodied, and robust, yet possesses great finesse and aromatic delicacy. Over time, its tannins soften, allowing its full bouquet of smoky and spicy aromas to unfold, with floral notes of rose and iris. It can age for 5 to 20 years. Ideally served between 15 and 17°C, these great Pauillac wines follow a single rule when it comes to food pairing: the pairing must enhance both the dish and the wine. They pair wonderfully with red meats, particularly entrecôte à la bordelaise, game, leg of lamb, and delicate fish.
