Drawing on his family's winegrowing heritage and 20 years' experience with various Burgundy estates, Pascal Clément set up his own wine merchant business in 2012 in Savigny-lès-Beaune. He moved into a 19th-century building with a vaulted cellar that can hold 200 barrels. At the same time, Pascal Clément had a stainless steel vat room built.

Pascal Clément works with winemaker-partners who share the same philosophy of respect for the terroir. Most of the vineyards are farmed organically, some biodynamically.

Pascal Clément's range of wines is based on parcel selections, reflecting the geology, exposure and micro-climate. It extends from the Côte de Beaune to the Côte de Nuits. To best express the specificities of each selected terroir, Pascal Clément uses only indigenous yeasts in the vinification of his wines.
