Pauillac
The Pauillac is a renowned red wine from the Bordeaux region. Pauillac is a port on the Gironde estuary, but the vineyard is perched on a magnificent, broad ridge of gravel—somewhat sandy—with a well-drained, white-colored soil resting on a substrate of marl that is more or less calcareous. Here, the soil is so poor that nothing grows except grapevines, which, in order to survive, must dig deep to find the nutrients that give the wine its quality. The vineyard area covered by the Pauillac appellation spans approximately 1,200 hectares, with an annual production of around 55,000 hectoliters.

Located on the left bank of the Gironde River, Pauillac is the wine-growing capital renowned for its exceptional expertise. Blessed with a mild climate in winter and warm summers, nestled among rolling plateaus and valleys, the vineyards of the appellation’s grape varieties Cabernet Sauvignon, Malbec, Petit Verdot and Merlot Above all, they enjoy ideal sunshine. Cabernet Sauvignon thrives in its ideal terroir—a mixture of sand and gravel. A sense of the good life permeates the wineries of Pauillac and its hills. Pauillac: Terroir and Expertise.

Pauillac has been a French red wine with Appellation d’Origine Contrôlée status since 1936. Of course, the terroir has been world-renowned for even longer, thanks in particular to the region’s three First Growths: Château Lafite-Rothschild, Château Latour and Château Mouton-Rothschild. The 18 Grands Crus Classés of Pauillac within the appellation, according to the 1855 classification, account for 85% of the region’s wine production and include such iconic estates as Château Pontet-Canet, Château Grand-Puy-Lacoste, and Château Lynch-Bages. 

The Pauillac wine is produced in the Médoc region in the vineyard from Bordeaux. Its vineyards stretch across 1,200 hectares and produce approximately 54,000 hl of wine per year. Located between Saint-Estèphe and Saint-Julien, Pauillac lives up to the reputation of its terroir with 18 classified Pauillac wines, including three First Growths: Château Lafite Rothschild, Château Latour, and Château Mouton Rothschild. Depending on the vintage, grape variety, and other criteria specific to each winemaker, the grapes are destemmed and then left to macerate in tanks for 15 to 30 days. Next, the juice and must are separated, followed by aging—lasting 6 to 24 months—in oak barrels, particularly for the grands crus. With Cabernet Sauvignon as the dominant variety in its blends, Pauillac wine reflects its winemakers: full-bodied, complex, and nuanced.

The Pauillac wines are rich, dense, and deep, with a succulent character. They display great finesse and distinction, and possess exceptionally delicate bouquets. Their extensive aromatic palette evokes black cherry, licorice, crème de cassis, morello cherry, rose, iris, cedar, smoky notes, and incense… The tannins are firm but not harsh. This red wine is a age-worthy wine and its deep ruby, almost black color when young—shifting toward an amber ruby hue as it ages—conceals treasures: baskets of ripe red berries, bouquets of violets, notes of the forest floor, and spicy aromas. It is a wine that is at once powerful, full-bodied, and well-structured, with great finesse and aromatic delicacy. Over time, its tannins soften, allowing its full bouquet of smoky and spicy aromas to unfold, with floral notes of rose and iris. It can age for 5 to 20 years. Best served between 15 and 17 °, these great Pauillac wines follow a single rule when it comes to food pairings: the pairing must enhance both the dish and the wine. They pair wonderfully with red meats, particularly entrecôte à la bordelaise, game, leg of lamb, and delicate fish.
