Corbières
The Corbières appellation d'origine contrôlée (AOC) extends its appellation area from the gates of Carcassonne to the former island of Leucate, from the first foothills of the Pyrenees to the foot of the Montagne Noire. The Corbières wine vineyards cover approximately 13,500 hectares, allowing an annual production of around 550,000 hectoliters.

The Corbières vineyard forms a vast quadrilateral, revealing traces of a turbulent geological history. The vines producing Corbières wines are planted in predominantly clay-limestone soils, with variations depending on the terroir: red sandstone in Boutenac, stony terraces in Lézignan, grey marl in Quéribus and Serviès, schist in the upper Corbières, and coral limestone along the Mediterranean coast. The Corbières appellation is subject to Mediterranean influence, evident in the eastern part of the vineyards in the typical garrigue vegetation. Some of the westernmost terroirs feel the influence of the ocean.

Corbières wines, produced in all three colors (red, rosé, and white), are made from the following grape varieties: Carignan (maximum 50%), Syrah, Grenache Noir, Lladoner Pelut, Mourvèdre, Piquepoul Noir, Cinsault, and Terret Noir for the reds and rosés. Corbières white wines are made from Bourboulenc (known locally as Malvoisie), Grenache Blanc, Maccabeu, Clairette, Muscat (maximum 10%), Piquepoul, Terret Blanc, Marsanne, Roussanne, Rolle, or Vermentino. Vinification is carried out using traditional methods for the reds and whites, while the rosés are made without the saignée (bleeding) method or direct pressing. The cultivation of these grape varieties is expertly mastered by Château d'Aussières, Château Vieux Moulin , Domaine Maxime Magnon, and Château La Voulte-Gasparets.

Today, Corbières producers are moving towards organic farming (approximately 45,000 hl) and sustainable development. This translates into recycling initiatives, the introduction of sheep for weed control, and the reduction of motorized equipment. 
Oenological description of Corbières wines 

Corbières red wine is distinguished by its deep red color with violet hues. On the palate, its flavor is full-bodied with initial notes of berries. Spicy and peppery flavors then emerge. 

Suggested wines to taste: La Forge Gérard Bertrand, Domaine du Grand Arc - Cuvée des 40, Château de Lastars. 

Corbières rosé wine has a salmon-pink color. It is characterized by a fruity aroma and a light palate. While Corbières red has notes of blackberry and blackcurrant, the rosé version offers notes of strawberry and cherry.

Suggestions to taste: Château Montfin, Villemajou, Cave de Castelmaure. 

Corbières white wine has a color ranging from white to pale yellow. Unlike the red and rosé versions, it has floral notes, plums, and a hint of anise.
